Lemon Herb Chicken (Crock pot)

I bought a new crock pot recently. My Husband was fascinated that I told him you could cook a chicken in it. So he bought a chicken and requested I show him how it's done. So we came up with this simple but delicious recipe. It just tastes fresh. The left overs are heavenly on a sandwich. I would have taken a picture of the whole chicken, but my husband was so excited to cut it, I wasn't fast enough!

Lemon Herb Chicken


1 whole chicken (remove the extra bits and discard)
steak seasoning
rosemary
thyme
oregano
1 whole lemon (thinly sliced)
margarine

 Lightly spray the sides and bottom of your crock pot. Place three lemon slices on the bottom of the crock pot. Generously "butter" the chicken with margarine. Generously sprinkle the herbs on the bottom of the chicken (in the order listed above). Place in the crock pot and repeat on the top of the chicken. Place the remaining lemon slices on top of the chicken and cook on high for 5 hours (or on low for 8 to 9 hours). Enjoy with wild rice or mashed potatoes!

Yields: 6 servings

Southwestern Eggs In A Nest

I eat a lot of eggs or quesadillas for lunch. It's just easy. But lately I've gotten bored of Scrambled or Fried eggs. So I made this little combination of both. It's still super simple, but a little different. And it satisfies my craving for both. Reminiscent of Eggs in a nest (a dish I was introduced to in Home Ec), this has a southwestern twist to it.

Southwestern Eggs In A Nest


Corn tortillas
Egg
Shredded cheese
Margarine
Pam
Salsa

Heat a pan on medium heat. Cut the centers out of your tortillas. Butter around the outsides. Place one tortilla (margarine side down) on a frying pan. Lightly spray the center. Crack the egg in the center and sprinkle cheese around the outside. Top with second tortilla (margarine side up). Flip when bottom is cooked. Top with salsa and enjoy!

I also will make my son a mini quesadilla out of the center. It's too cute!

Black Bean Salsa Chicken

I've been making it for years! It's delicious, easy, and cheap. You can serve it on rice, or in a tortilla. Or eat it one way one day, and the other way the next.

Black Bean Salsa Chicken (crockpot)


1 1/3 lbs chicken
1 1/2 c salsa
2 c black beans
1 t cumin
1 t garlic powder
2 c rice (cooked)

Place all ingredients except the rice in the crockpot. Stir the spices in. Cook on low for 4 hours or on high for 8.

Chicken Noodle Soup

I've felt in a dinner rut this week! So I decided to experiment with Chicken Noodle Soup. It's a comfort food I've missed since going Gluten Free. And it turned out fabulous! I just loved it.

Chicken Noodle Soup (crockpot)


8 c chicken broth
2 c carrots cut into 1/4 inch rings
1 1/2 c celery cut into 1/2 inch slices
1 c onion clopped
1/2 t garlic minced
1/2 t thyme
2 t salt
1/2 t black pepper
3 chicken breasts
1 batch home made pasta* (rolled thick and cut into 3 inch by 1/2 inch pieces)

Place all ingredients except the pasta into the crockpot and cook for 8 - 10 hours on low or 4 - 5 hours on high. 15 minutes before ready to serve, add the noodles and cook on high until done. Enjoy!


Yields: 5 servings

* or 3 c packaged pasta

Apple Steel Cut Oatmeal (crockpot)

I love steel cut oatmeal! It's so much meatier than the regular stuff. So when my mom offered her crockpot recipe, I jumped at the opportunity to try something that took a lot less time that usual. I like to top it with crasins and a spoon full of brown sugar. 

Apple Steel Cut Oats (crockpot)


1 c milk
1 T brown sugar
1/2 t vanilla
1/4 t salt
1 t cinnamon
1 c steel cut oats
4 c water
2 granny smith apples (peeled and cut into 1 inch pieces)

Heavily grease your crockpot. Put all ingredients in the crockpot and lightly stir to mix. Cook on low for 8 hours.
