Sweet Onion Poppyseed Dressing

This dressing is so versatile! You can put it over chicken and serve over a salad or drizzle it over a sandwich or wrap. My friend Rikelle made this for us over a veggie salad (ex. mushrooms, crasins, and parmesan). It has a subtle onion taste the first day, and gets stronger as the onions soak into the sauce. So if you like it real oniony make it the day before. Also, this makes a lot, so you can half it if you only want a little.

Sweet Onion Poppyseed Dressing


3/4 c oil
3/8 c vinegar
3/4 t salt
1/8 t dry mustard
3/8 c sugar
1 t poppyseeds
1/4 c red onions (finely chopped)

Mix all ingredients together. That's it! I just dumped all the ingredients into my condiment container and shook it until the sugar mixed in. Make sure whatever container you will serve it in, your onions will fit out of the hole. You will also need to shake it up before serving because it separates.

Poppyseed Bread

I've been craving poppy seed bread lately. Or more accurately those vanilla poppyseed muffins from Costco. So I played with a recipe and came up with this delicious bread! You can put a glaze on it, or you can just enjoy it plane. It turned out that good!

Poppyseed Bread


1 1/2 c brown rice flour mixture
1/4 t salt
1 1/2 t baking powder
3/4 t xanthan gum
2 eggs
1/2 c oil
1 c + 2 T sugar
3/4 c milk
1 T poppy seeds
1 1/2 t vanilla extract
1 1/2 t melted butter

Preheat oven to 350 degrees. Mix all dry ingredients together in a bowl. Add all remaining ingredients and mix thoroughly.  Pour in a greased bread pan and bake for 50 - 60 minutes.

Homemade Baked Good Mixes

Before having baby number two I did a lot of kitchen prep work so I could make quick and easy meals after the baby was born. At that time I stocked my pantry with pre-made baked goods. To make them, I mixed up all the dry ingredients in a big bowl, added dehydrated eggs, put the mix in a zip lock bag and wrote the directions on the front.

I did this with my Gooey Brownies, Honey Cornbread Muffins, and Waffles. It would be easy to do this with most of the quick breads. Here's an example of what I mixed in my Honey Cornbread Muffin Mix.

Honey Cornbread Muffin Mix


1 1/3 c brown rice flour mixture
1 c cornmeal
1 t xanthan gum
4 t baking powder
6 T powdered egg*

Mix all dry ingredients thoroughly. Store in an air tight container for up to two months. I like to write the directions on the bag.

Add to bake:

1/2 c oil
1/2 c honey
1 c water*

Mix together, pour into muffin tins and bake at 400 for 12 - 15 min.


* Make sure you read your powdered egg directions! They might be different than my brand. Also, you can skip the powdered eggs and just add an egg.

Chocolate Doughnut Holes

I have a weakness of Chocolate Doughnuts. Glazed, with a chocolate frosting, or even dusted with powder sugar. Any way you make them, I will enjoy them! When I was pregnant I would periodically break down and buy one and suffer the consequences. So I knew I needed to convert this to gluten free! I don't have a doughnut pan, so I made these doughnut holes in a mini muffin pan. The bite size is absolutely delicious!

Chocolate Doughnut Holes


1 c brown rice flour mixture
1/2 c sugar
1/4 c + 2 T coco powder
1/2 t baking soda
1/2 t baking powder
1/2 t xanthan gum
1/2 t vanilla
1 lg egg
6 T sour cream
1/4 c milk
1/4 c oil

Preheat oven to 375 degrees. Mix vanilla, egg, sour cream, milk and oil together. Add dry ingredients. Bake in greased pan until a toothpick can be removed cleanly.  Cool completely before topping. You can dip these in powdered sugar, a clear glaze, or my favorite, a chocolate glaze with sprinkles. Yummmm!

If you have leftovers I prefer to leave them sitting out on the counter. That way they get a little crusty around the edges (just like a doughnut in the store). If you put them in a tupperware, they get a little soft for my taste. But it's all about your personal preference.

Chocolate Glaze
1/2 c unsalted butter

1/4 c milk
1 t anilla
4 oz semi-sweet chocolate
2 c + 3 T powdered sugar


Heat butter, milk, vanilla, and syrup until chocolate is melted. Turn to low and stir in remaining ingredients. Mix until no more lumps exist. Dip doughnut holes in chocolate and top with sprinkles.


Yields: 36 doughnut holes
